1 1/2 Pounds Baby Gold Potatoes

4 Garlic Scapes

4tbsp Butter

4 Thick Slices Havarti Cheese

1/4 Cup Heavy Cream

Dill

Garlicky mashed potatoes. Everyones favorite side dish is here on the blog and man is it a keeper. I even dug the leftovers out of the fridge and inhaled it cold. It’s just truly that good.


Boil Potatoes in salt water for about 15-20 minutes.

Saute Garlic Scapes in butter until roasted and soft, about 5-10 Minutes on low so the butter doesn’t brown.

Mash Potatoes in a bowl and add butter and garlic scapes. Rip small Pieces from your Havarti and toss them in until they melt. Add in the cream and fold in dill. Thats all there is… see I told you it was easy!
